Preparing of Sumanak
Sumanak is a special spring halva of the festive table of Navruz. Sumanak is a tasty and healthy dish made from sprouted wheat seeds, which restores strength and gives vigor lost during the winter. During the preparation of sumanak, it is necessary to constantly stir with a large slotted spoon, resembling a shovel. As a rule, sumanak is cooked at night before the feast of women-mistresses of the house and their neighbors accompanied by songs and dances.
