Deciphering Food Preservation as a Storage Technique through Purumenth, a Goan Customary TraditionOne of the largest and earliest flows of culinary cultures and fresh produce to the Indian subcontinent emanated from Portugal. The Portuguese were ardent sailors. Their expeditions to voyage, discover, and conquer brought Western foods to the Eastern world. The Portuguese contributed foods that are now staples in the Indian diet. Goa became the chosen land as the local inhabitants were regular pork consumers, like these visiting sailors. This points to the influence in terms of food and consumerism by colonialists and settlers. TERRACOTTA CLAY ART OF MOLELA, RAJASTHANThe small sun-soaked village of Molela, located approximately fifteen to twenty kilometers from the city of Udaipur in Rajasthan, is home to a vibrant community of terracotta clay artists. Over the years, Molela has emerged as a focal point in the art of making attractive votive plaques or idols of gods, with terracotta. While the early creations were originally cast as standing idols of local deities and various forms of the Hindu god Vishnu, today these figures are often mounted on tiles or plaques and are hung from the walls of homes and temples. The Masters of Ceremonial Dishes in TurkeyIn Turkey, it is mostly traditional female cooks who prepare wedding dishes in most villages, although their numbers have declined. Traditional female cooks have almost always been at the center of my culinary eld research. I carried out an important part of this research in the villages and small towns of the Aegean (Izmir, Aydın, Manisa), Mediterranean (Adana), Marmara (Balıkesir, Çanakkale), and Central Anatolia (Çorum) regions between 1998 and 2018. e data I obtained by interviewing and observing techniques in groups that describe themselves as immigrants, natives, Alawis, Yoruks, or Turkomans in these settlements showed that traditional female cooks who prepare ceremonial dishes, especially for weddings, have some common equipment and knowledge. is equipment included the ability to control the material, cooking and presentation techniques of ceremonial food and to transfer the traditional knowledge, skills, and experience of food to future generations.Year2019NationSouth Korea
