The Recipe and History of Thai Tomyam KungTomyam kung, or spicy shrimp soup, is a typical Thai dish that became popular only 50 years ago. Tomyam kung is a hot soup made by mixing various ingredients, including herbs, in boiling water. The basic ingredients include ground cilantro root, lemongrass, galangal, torn kaffir lime leaves, lime juice, fish sauce, bird’s-eye chilies and shrimps. In addition, mushroom, tomatoes, and onions may be added depending on preference. \n\nThe word “tomyam” is a compound word in the Thai language. It consists of two words — “tom” and “yam,” which mean “boiling” and “mixing,” respectively. These two words refer to the Thai cooking process. \n\nTomyam is a traditional Thai dish originating from the country’s central region. The oldest recipe was found in King Rama V’s reign. It was stated that only snakehead fish and stingray should be used in tomyam pla, or spicy fish soup. There are some secondary sources referring to dishes that had similar ingredients and recipes to tomyam kung. However, they still lacked some of the important ingredients that are familiar in the dish today, such as lemongrass, galangal, and torn kaffir lime leaves.\n\nThe very first “tomyam kung” recipe appeared in a book, Khong Sawoei (Thai royal cuisine), written by Mom Rajawongse Kitinadda Kitiyakara. The writer cooked fresh shrimp soup for His Majesty King Bhumibol Adulyadej The Great (Rama IX), Her Majesty Queen Sirikit, the Queen Mother, and the prince and princesses at the Klai Kangwon Palace, Hua Hin, in 1962. The recipe started with the instruction to make a soup from shrimp shells and heads, seasoned with fish sauce, kaffir lime leaves, and lemongrass. This was then strained to retain only the broth, which was poured into a bowl of boiled shrimp and seasoned with lime juice. Ground chilies and more fish sauce were added before serving. \n\nThe precise flavor of tomyam kung has never been fixed; it can be seasoned according to the consumer’s preferred tastes. However, a basic recipe is as follows:\n\nSlice the lemongrass, galangal, tomatoes, chilies, mushrooms, and shrimp\nBring a pot of water to the boil on the stove \nAdd the sliced lemongrass, galangal, and kaffir lime leaves\nBoil for about 5 minutes and then add the shrimp\nAdd the sliced Thai chilies, mushrooms, and tomatoes\nFlavor by adding a little fish sauce and sugar (you can add more if desired)\nTake the pot off the heat and squeeze in the lime juice (if you do this before taking the pot off the stove, the heat will turn the lime juice bitter) \nThere are in fact types of tomyam kung: clear and thick. The clear soup is the original style, while coconut milk is added to make the thick variety.\n\nTomyam kung is a Thai national soup that very popular among both Thais and non-Thais. It has high nutritional value and is not too spicy. Its fragrance derives from vegetables and spices that are thought to help blood circulation, bringing good health. Tomyam kung is a very popular dish in every Thai restaurant. In addition, many popular snacks and instant noodles also use the flavors of tomyam kung. \n\nIn 2011, tomyam kung was inscribed by the Department of Cultural Promotion, Ministry of Culture on the list of National Intangible Cultural Heritage under the domain of Knowledge and Practices Concerning Nature and the Universe. A COMMUNITY SAFEGUARDING ITS LIVING HERITAGE, LKHON KHOLOn the east bank of the Mekong River about fifteen kilometers from Phnom Penh is Wat Svay Andet, a Buddhist monastic community mainly supported by two villages, Ta Skor and Peam Ek of Lvea-em District, Kandal Province. Wat Svay Andet is home to lkhon khol, a kind of theatre with recitation in which actors are all males, wear lacquer masks, and perform only scenes from Reamker, a Cambodian version of the Sanskrit Ramayana epic. This dance drama is accompanied by pinpeat, a traditional orchestra of percussion instruments. Lkhon KholInscribed in 2018 on the List of Intangible Cultural Heritage in Need of Urgent Safeguarding, Lkhon Khol Wat Svay Andet (Lkhon Kohl) is practiced in a community surrounding Wat Svay Andet, a Buddhist monastery located around ten kilometers east of Phnom Penh on the Mekong River. Lkhon Khol is a traditional mask theater performance of Cambodia with its origins during the Angkor period (ninth to fifteenth centuries). It exclusively is performed by men wearing masks to the accompaniment of a traditional orchestra and melodious recitation.\n\nLkhon Khol, also known as “the monkey dance,” is ceremoniously performed once a year after the Khmer New Year for ritual purposes, linked mostly to the cycle of rice farming and the needs of farming communities. A specific theatrical performance is the Reamker, the Khmer version of Ramayana, which includes an introduction by storytellers who play an important role in the performance.\n\nLkhon Khol is passed across generations orally. However, from 1970 to 1984, due to war and the Khmer Rouge regime, transmission was nearly impossible. In addition, economic factors, insufficient resources, and economic migration from the community have also limited transmission, which is what led it to be inscribed on the Urgent Safeguarding list.\n\nTwo theater groups, Kampong Thom and the National Theater troupes from the Department of Fine Arts and the Ministry of Culture and fine arts, have started performing the Lkhon Khol. The estimated surface area is 44.9 square miles and the highest elevation is 2900 feet (880m). Inle Lake is a major tourist destination in Myanmar, attracting tourists by the picturesque beauty of the lake surrounded by mountains, houses standing on poles in the \nlake, beautiful floating gardens, and the cultural practices of the Intha fishermen. The main ethnic people of Inle Lake are Inthan while Pa Oh, Taungyo, Kayan, and Shan people also add to its diversity. \n\nThe people who live in Inle Lake are called Intha (people of lake). They live on the shore and on the lake, making a living by fishing, engaging in handicraft activities, cultivating on floating gardens as well as on \nthe delta of the lake. For transportation, the Intha people use wooden boats; for long trip they use long tail boats with engines, carrying local passengers and goods. Small boats are used for their daily activities.\n\nThe main economy of Inle depends on cultivation and fishing. The unique style of the Intha people is rowing the boat with one leg by standing. They paddle this way because reeds and water plants are many \nin the lake, and if they row sitting down on the boat they could not see reeds and water plants. However, due to the fast-paced development of modernity, heritage sites are at risk of deterioration while intangible elements face extinction. At the same time, mass tourism has also penetrated cultural heritage sites, significantly affecting the lives of local communities. As a consequence of poverty and lack of access to quality education, many of these communities have not been able to resist the commodification of their cultural heritage. They have often then seen their heritage being subjected to exploitative tourism practices, endangering the integrity of their way of life. In strong opposition to these tendencies, we believe that the cultural heritage of local and Indigenous communities can be a comparative advantage in Southeast Asia, helping such groups to achieve inclusive and sustainable development.Year2022NationThailand

Chak-ka-yer as a game is related to thoughts, beliefs, customs, traditions, rituals, and values of the people in different areas. Chak-ka-yer is a high-level game of development and doesn’t focus on systematic contests; it has specific agency to respond to and has the team seriously trained and practiced to win the championship.
