Foodways and FolklifeThe food we eat is an important part of culture. It is also an expression of community identity. As American folklorist Millie Rahn writes, The kitchen, historically, is the place where families gather and where the everyday and the ceremonial meet and overlap. Here families interact and share private traditions, expressing identity through their food to each other and to the world. Creativity is alive in this space, from daily mealtimes to more elaborate feasts that mark rites of passage, religious and secular holidays, and other special events. This is where knowledge is passed on, from traditional ways of preparing and using various ingredients, implements, tools, and techniques to legends, stories, anecdotes, and cultural exchanges that have become part of familial and regional folklife. We all eat, and associate different layers of cultural meaning to the food we consume. Explorations of food, then, can be an easy conduit into the complex world of intangible cultural heritage. This article gives several examples from the safeguarding initiatives of the Heritage Foundation of Newfoundland and Labrador that have used foodways as a means to get people thinking about, and engaged with, concepts of cultural transmission and heritage conservation.Year2019NationSouth Korea

Punnuk: Unwinding after the Harvest, the Tugging Ritual in the PhilippinesThe punnuk is a tugging ritual of the village folk from three communities in Hungduan, Ifugao in Northern Luzon, Philippines. It is performed at the confluence of Hapao River and a tributary as the final ritual after the rice harvest. Its consummation brings to a close an agricultural cycle and signals the beginning of a new one. \n\nThe punnuk is a ritual of pomp and revelry. Garbed in their predominantly red-col-ored attire of the Tuwali ethno-linguistic subgroup, the participants negotiate the terraced fields in a single file amidst lush greens under the blue skies. The tempo builds up as the participants reach the riverbank, each group positioned opposite the other. Worldviews"In a region as geographically immense and culturally diverse as the Pacific, intangible cultural heritage must be seen in terms of diverse worldviews, each with its own knowledge system and philosophy of life that structures and informs. This section addresses how intangible cultural heritage is reflected through specific cultural worldviews. As specific and unique as they are, however, each Pacific worldview can be seen as having a commonality structured by three dimensions: the spiritual, the physical, and the afterlife or ancestral realm. \nDespite their commonalities, the themes in this section still represent Pacific elements of knowing, philosophy, governance, and wisdom that sculpt life from vastly unique perspectives. The Tongan concept of heliaki, for instance, is not just a knowledge of language and prose, but rather a construct through which the Tongans build views about themselves and their interactions as well as the hierarchy within their society. In a similar way, Palauan place names are much more than words to mark locations; they are capsules of knowledge, events, and history that help the Palauan people identify themselves and their connections to one another. Indigenous Knowledge, Food Diversity and Nutrition Sufficiency: A Case Study of Tharu Indigenous Knowledge of NepalNepal is a multiethnic, multilingual, and multicultural country with rich cultural heritage located between India and China. The 2011 census recognized 125 caste and ethnic groups and 123 different languages. The new constitution of the Nepali federal republic has further recognized all the spoken languages as national languages. The National Foundation for Development of Indigenous Nationalities (NFDIN) recognized fifty-nine indigenous nationalities residing in Nepal in 2002 (NFDIN 2011). However, in the 2011 census only forty-seven indigenous nationalities were reported (CBS 2012). Recreating the Taste of HomeThe biggest North Korean migrant community outside East Asia is located in a somewhat unlikely place, New Malden, UK, a suburb in southwest London (see Figure 1). Approximately 1,000 North Koreans live alongside the established community of over 12,000 South Koreans. In the foreign kitchen, what North Korean migrants do is recreate authentic traditional North Korean food that they have not had for such a long time. 3 Harvest and Landscapes"In this region of many “lands” surrounded by water, knowledge of the land and its harvests is tied closely to identity and heritage. This section’s themes thus offer a closer look at how the knowledge of caring for the land and harvests is a way of feeling for the Pacific islanders. This ICH, in addition to coloring people’s interactions on the land and carrying expressions of respect, is a means of ensuring sustainability and prosperity.\nPacific islanders depend largely on the land and their harvests from it for their survival, but these also hold deeper meaning for life. To the people of Vanuatu, for instance, laplap soso'ur is more than an edible delicacy: it is a feature of their cultural identity and a means to bring people together across societal levels. Similarly, in Palau, the mesei taro fields are valuable property, but they are also much more in that these pieces of land are deeply connected to the identity of the people, particularly women, and figure prominently in the colorful oral histories of the Palauans. Rice and Livelihood Diversity for the Ethnic Minorities of the Northern Highland of Viet NamThe chapter is part of a UNESCO book about intangi- ble cultural heritage (ICH) in relation to the Sustain- able Development Goal 2 (SDG2): Zero Hunger. This chapter starts with an introduction to the Centre for Sustainable Rural Development (SRD), a Vietnamese organization that ran a project related to ICH and SDG2. The chapter continues with an introduction to the geographical and social context of the project, as well as three case studies describing the effect of the project activities on farmers’ lives. TRADITIONAL FARMING SYSTEMSThe Tongan farming system is essentially an agro-forestry system of bush or grass fallow with cultivated coconut palms and other useful trees such as Bischovia javanica (used in the coloring and dying of tapa cloth), Santalum yasi (used in sandalwood perfume), Artocorpus altilis (breadfruit fruit trees) and Morinda citrifolia (used for medicinal purposes) creating a multi-story system for multiple cropping. The traditional staple crops of yams (Dioscorea spp), taro (Colocasia esculenta), sweet potato (Ipomoea batatas) and cassava (Manihot esculenta) dominate agricultural production and household consumption. Tongans have evolved a highly productive complex farming system which exploits good soils and climate without fertilizer. Basically, the traditional Tongan farming system is one main cropping cycle but was highly modified by Tongan forefathers to suit individual preferences, food security, nutritional requirements, and sustainability and meet sociological obligations.Year2011NationSouth Korea
