Somsa of Djizzakh
The largest somsa of Uzbekistan is cooked in Djizzakh. Meat, inner fat, onion and spices are needed for preparation of somsa. These all ingredients are wrapped in solid dough and baked in special tandir, handmade oven. At first sight preparing of somsa is very simple but nowhere in the country one can not find as delicious somsa as in Djizzakh.

As a result of invention of thousands of ways of cooking meal on fire, meat became the food product, which is consumed all over the world. Despite emergence in very ancient times,nthe meal called ‘Tandir go’sht’ (Oven Meat) it became wide spread among southern part of Uzbekistan among people whose ancestors were from nomadic tribes. Even though it seems easy to prepare this meal, tandir meat, that is prepared in Surkhondarya, Qashqadarya, Samarqand,nNavoiy and in some mountainous regions of Jizzakh differs from meat prepared in other regions with its taste and appetizing appeaeance .

Tandir is made of sozn(yellow) sticky clay, made from the ground, by mixing the cane and sheep wool to it.The amount of additives in the clay and pressing it with the foot are very important. This is because the clay needs to be very hard to handle the oven for a long time. Otherwise, the oven can quickly break down.The craftsmen who make tandirs are called tandirchilar (oven makers).This profession is also taught by a teacher to an apprentice, from a father to a child.
