
Description | 키르기스인들의 전통 음료 ‘크므스’ 마유를 발효시켜 만드는 크므스(Kymyz)는 키르기스의 국민 요리에 속하는 전통 음료다. 크므스를 처음 만들어 사용한 이들은 중앙아시아와 몽골의 유목민들이었다. 약 5,500년 전 신석기 시대에 크므스를 최초로 마신 흔적이 발견된 바 있다. 수사미르 계곡에서 말을 길들이던 다른 증거들과 더불어 크므스처럼 발효한 듯한 말젖의 흔적이 남아 있는 염소 가죽 자루가 발견되었다. 유목민들은 수 세기 동안 크므스 제조 방법을 비밀로 지켜왔다. 마유는 짐승 가죽을 깨끗이 씻은 후 소나무 등 침엽수 가지를 태우는 불 위에서 연기를 쐬어 독특한 향과 맛이 배게 한 ‘차나크(Chanach)’에 담아서 보관한다. | ||

Kymyz muryndyk is a festive rite of sharing and tasting the first kymyz. Horse breeders of Terisakkan Village celebrate 'biye baylau' playing dombra and singing traditional songs. Kymyz muryndyk is a favourite and long-awaited festive event, lasting for many days and bringing together not only the whole community of the village, but also many visitors from far away.

Kymyz murunduk (Entertainment with First Koumyss). From the early morning, on round tables or just on the earth near tethered horses, the families serve a ritual food for regaling villagers and visitors. Presenting the images of ancestors, famous horse breeders, is a new tradition. Kazakh spring horse-breeding rites mark the end of the old and the beginning of the new yearly horse-breeding cycle. Rooted in the traditional knowledge of nature and in the millennia-aged close relations between man and horse, these rites involve skills inherited from the nomadic ancestors and adapted to the present day reality. The festive rites compiles of the triade: (1) .‘Biye baylau’; (2) ‘Ayghyr kosu’; and (3) ‘Kymyz muryndyk’. ‘Kymyz muryndyk’ (metaphorically, ‘initiation of koumiss’) is the 'first koumiss sharing' rite, opening a season of its making and drinking.
